Fast, Easy, and Inexpensive
With rising prices across America, we can cut expenses and the use of our valuable time by preparing inexpensive and fast meals for ourselves and our families.
All of the following recipes use ground beef, but they are just as good or better with ground turkey or a higher grade of beef, such as ground chuck or ground sirloin. Any stocks used in these revipes can be replaced with vegetable stock and vegetarians can substitute beans or eggplant (my favorite substitute) for the meat.
Low fat and low salt products can also be substituted in these recipes and they are still just as good. Please enjoy.
Fast Mexican Meat Loaf
Ingredients
- 1 regular size can Pepper Jack Soup, or substitute 4 oz whole milk or cream and 4 oz Pepper Jack Cheese
- 1 1/2 lb. ground beef or turkey, lightly browned in a skillet with olive oil. Don't cook until completely done - only about halfway!
- ½ Cup dry bread crumbs, herbed if you like, or use your own homemade
- 1 whole beaten egg
- 1 medium onion, chopped
- 1 tsp. garlic powder
Instructions
- Mix ½ of the can of soup in a mixing bowl with the browned meat, bread crumbs, egg, onion and garlic powder thoroughly.
- Pat the meatloaf into an 8x4 inch loaf pan, making sure there are no air holes or gaps.
- Bake at 375 degrees F for 15 minutes.
- Pour remaining soup over meatloaf and continue baking for 15 minutes or until done.

Quick Stuffed Bell Peppers
Ingredients
- 2½ Cups herbed & seasoned stuffing mix or your own homemade herbed croutons
- 1 TBSP butter/margarine/butter substitute or Olive Oil
- 1 lb. ground beef
- 1 medium onion, chopped
- 14½ oz. whole peeled tomatoes, cut up
- 8 oz. whole kernel corn, drained well
- 2 medium green or orange bell peppers, cut lengthwise into quarters
Instructions
- Combine ¼ Cup stuffing and butter. Set aside.
- Brown and sauté beef and onion in skillet over medium-high heat until browned. Pour off excess grease.
- Add tomatoes and corn. Add remaining stuffing mix and toss.
- Place the peppers in 2-qt. shallow baking dish. Spoon beef Mixture over peppers. Cover.
- Bake the dish at 400°F. for 25 min. or until peppers are tender. Do not allow to become mushy.
- Sprinkle with more of the stuffing mix or your own bread crumbs.
- Bake an additional 5 min. or until golden brown.
Fast Taco One-Dish
Ingredients
- 1 lb. Ground beef or turkey
- 1 regular size can Condensed Tomato Soup
- 1 Cup Chunky Salsa
- ½ Cup 2% milk
- 6, small (8") flour tortillas. Cut them into about 1" square pieces
- 4 oz. shredded Cheddar cheese
Instructions
- Brown beef in a skillet over medium-high heat, stirring to crumble and separate the meat; don't allow large chunks to remain. Pour off fat.
- Add soup, salsa, milk, tortillas and half of the cheese.
- Spoon into 2 Quart baking or casserole dish and cover with its lid or foil (not plastic wrap, which will melt)
- Bake the dish at 400°F. until hot, about 20 - 30 minutes.
- Sprinkle with remaining cheese and melt under broiler.
High-Speed Beef and Potatoes
Ingredients
- 1 lb. ground beef
- 1 can Cream of Mushroom soup
- 1 TBSP Worcestershire sauce
- 6 oz. frozen vegetable combination of your choice, thawed and patted dry
- 2 Cups water
- 3 TBSP margarine/butter/butter substitute
- ¾ Cup 2% milk
- 2 Cups good brand of mashed potato flakes
Instructions
- Brown beef in a skillet and drain any excess fat.
- Combine the beef, ½ can soup, Worcestershire, and vegetables in 2 Quart baking dish.
- In a saucepan, combine the water, margarine and remaining soup, stir, then heat to boiling. Remove immediately from heat and stir in the milk.
- Now SLOWLY stir in potatoes to avoid large clumps.
- Spoon potatoes over beef Mixture and bake at 375 degrees F for 20 - 25 minutes until done.
Fast Beef Fajita
Speedy Beef and Broccoli
Ingredients
- 1 lb. boneless beef sirloin steak , ¾" thick or use ground sirloin
- 2 TBSP Olive Oil
- 2 Cups separated broccoli flowerets
- 1 medium onion, cut into quarters
- ⅛ tsp. garlic powder
- 1 regular size can Cream of Broccoli Soup
- ⅓ Cup water
- 1 TBSP. soy sauce
Instructions
- If using a steak, slice beef into very thin strips.
- Heat 1 TBSP oil in a skillet and add the beef.
- Stir-fry or simply brown the meat and remove it to a dish.
- Add the rest of the oil to the skillet, add broccoli, onion, and garlic and stir-fry until tender-crisp.
- Now pour in the soup, water, and soy.
- Heat mixture to a boil and then replace meat into the skillet and heat through.
Mexicali Surprise
Ingredients
- 2 slices of whole grain bread, torn into small pieces
- ½ Cup milk
- 2 lb. ground chuck
- 2 whole eggs, beaten
- 1 small onion, chopped
- 3 cloves minced garlic
- ¼Cup chopped parsley
- ½ tsp. ground black pepper
- 50 pimento-stuffed Spanish olives
- 32 oz. ready-made picante sauce
Instructions
- Use the bread to soak up the milk.
- Mix the beef, eggs, onion, garlic, parsley, pepper, and soaked bread and shape into 1" diameter meatballs. Place 1 whole olive in the center of each meatball as you make them.
- Place meatballs into a baking dish.
- Bake the dish at 350 degrees F about 20-25 minutes.
- Put meatballs in pot and add picante sauce, quickly heating through over medium heat; or heat the picante sauce in the microwave while the meatballs are baking and combine all the hot ingredients at the end and serve.
